Rockin’ Red Velvet

Sadly I must admit, this review is a little behind, but this past holiday season I had the opportunity to try Casey’s Cupcakes. I went up to Riverside one evening this year for the Mission Inn Festival of Lights. Now up until than I had never given myself the chance to try any of these cupcake boutiques that over the past couple years have seemed to pop up everywhere, but I adore cupcakes and have been dying to give in. Casey’s Cupcakes did not disappoint, at least not fully.

The store was packed on this particular night, so many of their flavors were sold out, but I did manage to get one Rockin’ Red Velvet and a Caribbean Coconut. Both cakes were incredibly moist. I am not a fan of coconut, but I absolutely fell in love with the coconut cupcake. The cake has coconut baked right into it and the frosting is then covered in coconut as well. Despite all this the coconut flavor is nowhere near overwhelming, falls at exactly the right amount. The red velvet cake had a very nice flavor and the frosting was just right, not too sweet or strong at all. The frosting’s texture was a little off putting, but not too bad.

Caribbean Coconut

Now to my slight disappointment, the cake flavor combinations. While the cakes are balanced, moist, and very cute, there is not much variety. Too many of the cakes are simply vanilla or simply chocolate, with just varying extensive decorations. Besides a peanut-butter cupcake, I really did not see anything that interesting at the store. After browsing their website I came across others such as a coffee flavored cake and a raspberry cake, but still lots of vanilla and chocolate. Besides that no other real complaints, cute moist cupcakes, prepared well.
